5 Gallon all-grain

OG = ~1.040 to 1.047
FG = 1.010 to 1.015

6 lb 2 row pale malt
1.5 lb Melanoidin malt
5.75 oz crystal malt 90L
1 oz Caraffa II (dehusked or debittered chocolate malt)

0.85 oz Target 60 min
0.25 oz Northern Brewer 15 min
0.5 oz Fuggles 15 min
0.5 oz Fuggles in secondary as dry hop

Dough-in at 95oF
Mash 149oF 60 min
Mash-out 168oF 5 min
Sparge with 77oF water (aged or dechlorinated)
Vorlauf and sparge to collect about 7.5 gallons (to end with 5.5 gallons)
Boil 60 min
Chill, aerate and pitch yeast - Wyeast London Ale or London ESB Ale
or White labs London Ale
Rack to secondary until finished, prime with 0.75 cps dextrose and bottle
