		<description>Why not simply use dextrose and simplify everything with a cheap available?  There is an article in the current issue of Zymergy (Aug/Sept?) 2008 addressing this very issue in which 5 parallel worts were made and only a different sugar was substituted to compare to no sugar at all.  The results are very revealing and speak to the importance of using sugars that contain complex components beyond the sugar molecules.  The cooking makes it different but the change in color told you that!  Cheers,  Curt.</description>
